This Rocky Road recipe is one I make all the time because it is just SO easy! You can’t really go wrong. This is perfect to take for a picnic and is easily customisable; the cherries you can swap for raisins or soft sweets if you wish.

You will need a square brownie tin lined with baking parchment.

Ingredients

  • 75g unsalted butter, softened

  • 100g milk chocolate

  • 100g dark chocolate

  • 5 tbsp golden syrup

  • 400g digestive biscuits, broken into small pieces

  • 75g marshmallows, cut into quarters

  • 50g glacé cherries

  • Jazzies (chocolate buttons with sprinkles), to decorate

Method

  • Start by melting the butter, chocolate and golden syrup in a pan over a medium heat. Once smooth and fully combined remove from the heat.
  • Add the digestive pieces, marshmallows and cherries and mix until fully coated in the chocolate mixture.
  • Pour into your baking tray, pushing down slightly to the edges and decorate the top with Jazzies.
  • Refrigerate until firm, then cut into squares to serve, and enjoy!
