This Rocky Road recipe is one I make all the time because it is just SO easy! You can’t really go wrong. This is perfect to take for a picnic and is easily customisable; the cherries you can swap for raisins or soft sweets if you wish.

You will need a square brownie tin lined with baking parchment.
75g unsalted butter, softened
100g milk chocolate
100g dark chocolate
5 tbsp golden syrup
400g digestive biscuits, broken into small pieces
75g marshmallows, cut into quarters
50g glacé cherries
Jazzies (chocolate buttons with sprinkles), to decorate
- Start by melting the butter, chocolate and golden syrup in a pan over a medium heat. Once smooth and fully combined remove from the heat.
- Add the digestive pieces, marshmallows and cherries and mix until fully coated in the chocolate mixture.
- Pour into your baking tray, pushing down slightly to the edges and decorate the top with Jazzies.
- Refrigerate until firm, then cut into squares to serve, and enjoy!
