These delicious cupcakes consist of a simple yellow sponge topped with an indulgent layer of soft set chocolate ganache and a pinch of flaky sea salt. Perfection.

This recipe makes 12 cupcakes. You will need a muffin tray lined with paper cupcake cases.

Ingredients

Directions

  • Preheat the oven to 180 degrees c fan
  • Cream the butter and sugar together until smooth and light in colour. Beat in the eggs one at a time and incorporate till there are no lumps left.
  • Sift the flour and baking powder and then fold into the wet batter. Pour evenly into each cupcake case so each is about half full. Bake for 15-20 minutes until risen, golden and a skewer poked into the centre of each comes out clean.
  • Leave then to cool completely on a wire rack.
  • Meanwhile, melt the chocolate and coconut oil in a pan over a low heat until silky.
  • Level each cupcake by slicing the top off so it’s flat.
  • On top of each cake, pour a layer of the chocolate sauce and leave to set. To finish, sprinkle some sea salt flakes over the chocolate, and enjoy!
