Chilling time

This recipe makes approximately 24 chocolate truffles . You will need a tray lined with baking parchment to chill the truffles on.

  • 1 cup double cream

  • 1 1/2 cups dark cooking chocolate

  • 3/4 cup cocoa powder

  • To make the chocolate ganache mixture, heat the double cream in a saucepan over a medium heat until almost to the boil stirring continuously to prevent it from catching on the bottom of the pan. Once hot, remove from the heat, add in all of the chocolate and stir until the chocolate is fully melted and a thick chocolate sauce forms.
  • Chill the mixture in the fridge for about an hour until the texture has thickened and easy to scoop. Prepare a plate with a layer of cocoa powder on. With a tablespoon, scoop a spoonful of chocolate ganache out of the bowl and quickly roll between the palms of your hand. Before the chocolate begins to soften roll the ball on the plate to coat the truffle in a thin layer of the cocoa powder. Repeat with the rest of the mixture, pop the truffles onto your tray and leave to chill in the fridge for at least another hour (and ideally overnight).
  • Enjoy! Whether you give these as a gift, share or simply save them for yourself, I’m sure these will go down a treat!

  • These truffles are easily customisable. Coat them in extra chocolate of your choosing, sprinkles, ginger, cinnamon or additional spices for that extra wow factor.
