A super simple classic sponge cake with a hint of elderflower, refreshing cream and tart berries to top, the perfect dessert to enjoy during the summer months.

Ingredients

Directions

  • Preheat the oven to 180 degrees C.
  • Cream together the butter and sugar until smooth and light in colour. Beat in the eggs until fully incorporated, then sift and fold in the flour and baking powder and fold into the mixture.
  • Stir the elderflower cordial into the batter then pour into the prepared cake tin. Bake for 22-25 minutes, or until a skewer poked into the centre comes out clean.
  • Leave the cake to cool completely. In the meantime put the berries and sugar in a saucepan over a low heat. Once it comes to a gentle simmer, remove from the heat and leave to cool.
  • Lastly, whip the double cream until gentle peaks form, then use a spatula to stir in the elderflower cordial.
  • Assemble by spreading the cream evenly on top of the cake and topping with the berries. Cut into slices (serves approximately 10-12) and enjoy.

Notes

  • You will need a 26cm round cake tin, greased and lined with baking parchment.
