Sometimes all you need is a quick, easy and substantial meal, and this pasta recipe is perfect. Using natural ingredients stocked by The Postal Pantry Company, this recipe uses pesto, sundried tomatoes, olives and sweet corn, all products which can be refrigerated in an airtight container for at least a couple more days. I used Pea pasta to make this dish naturally gluten free but any pasta of your choice also works well. So whether you are improvising with leftovers or beginning to meal prep, this is an easy Versatile meal that is pretty much fool proof!
5 Ingredient Pesto PastaDifficulty: Easy
This recipe serves two, but you can easily halve of double quantities depending on how many potions you need.
200g pea pasta (or pasta of your choice)
2 tbsp green or red pesto
1/2 cup sundried tomatoes
1/3 cup olives, halved and pitted
1/2 cup sweetcorn
- On a medium heat, boil the pasta until aldente (or as instructed by the packet)
- whilst the pasta is cooking prepare the olives and sun dried tomatoes.
- Drain and rinse the pasta in boiling water, rather return to the hob and cook for a further minute whilst mixing in all the ingredients.
- Serve immediately hot, or leave to cool and refrigerate for a cold pasta salad.
